Spinach Smoothie Bowl

Ingredients

  • ¾ cup coconut milk
  • ½ cup blueberries
  • ½ cup spinach
  • ½ frozen banana
  • ½ cup pineapple, chopped
  • 1 scoop plant-based protein powder (optional)

Toppings

  • 2 tablespoons chia seeds
  • 2 tablespoons shredded coconut

Directions

  1. Add the blueberries, spinach, banana, pineapple, (and protein powder) to a high-speed blender.
  2. Blend until smooth.
  3. Serve in a small serving bowl. Top with chia seeds and shredded coconut.
